Honey Roast Chicken

Exceptionally, and you will have to forgive me, I will give you a Lebanese recipe again.

Why this relentlessness, simply because it is the recipe that I made at 12AM and that I really enjoyed myself, because this recipe is very simple and unpretentious, and because I was happy to eat a roast chicken other than just stupidly on a spit.


Beware, it will be quite short, so for 4 people

  • 1 ORGANIC Chicken of 2 Kgs,

  • 2 cloves of chopped garlic,

  • 2 tablespoons chopped mint,

  • 60 g butter,

  • 1 lemon juice,

  • 4 tablespoons of honey,

  • 375 ml of water,

Count a little over an hour of cooking depending on the size of your chicken


  • Preheat the oven to 200 ° C,

  • Degrease the chicken, (given the amount of butter to follow, this is useful),



  • Mix mint and garlic, slide the mixture under the skin of the chicken,




  • In a saucepan, heat the butter, honey and lemon in stirring constantly,



  • Once the butter is completely melted, brush the chicken with this mixture,





  • Place the chicken on the oven rack above a dish filled with water,

  • Brown at least 1 hour 15 minutes (for a 2 kg chicken, emptied).

You just have to taste, the freshness of the mint, the strong flavor of the garlic, the sweetness of the honey, all these flavors combine in this dish for the pleasure of the palate.



And to accompany this dish to be tasted in the shade of the parasol, a Lebanese wine, a Rosé Château Kefraya (within € 10) or a Rosé Cassis from Clos Sainte Magdeleine (less than € 20).
