Chicken and tomato salsa burritos

This is my Mexican period, a cuisine with pre-Columbian, Spanish, African and Caribbean influences, a cuisine that reflects the regional, social and traditional characteristics of this country.

Traditional Mexican cuisine was inscribed in the Intangible Cultural Heritage of UNESCO on November 16, 2010.

The burrito is a culinary preparation originating in Mexico, where the use of this name has been attested since at least the end of the 19th century, it consists of a tortilla rolled up in the shape of a cylinder, topped with various ingredients such as meat. beef, beans, tomatoes, spices, chili, onion, salad, etc ....

Mine will simply be garnished with onions and chicken meat.

For 4 people, plan:

  • 600 g of chicken breasts,

  • 2 medium onions, thinly sliced,

  • 1/2 l of beef broth,

  • 8 tortillas of 20 cm (or approaching),

  • 1 cinnamon stick

  • 4 cloves,

  • 1 bay leaf (more according to taste),

And as an accompaniment, a tomato salsa

  • Medium tomatoes finely chopped,

  • Red onions,

  • 2 tablespoons of chopped fresh coriander,

  • 2 teaspoons of lemon juice,


  • Cut the meat into 2 cm pieces,

  • Brown the onion in oil,

  • Add meat, cinnamon, cloves, bay leaf and beef broth,

  • Boil, reduce the heat,

  • Simmer 30 to 45 minutes until the meat is tender and the liquid is absorbed,

  • Remove from the heat and remove the cinnamon, cloves and bay leaf,

  • Shred the meat with a fork,

  • Serve in rolled tortillas

  • Serve with tomato salsa for which you have mixed all the ingredients.

Serve with a Côtes de Provence Miraval rosé (€ 14.90 for un jour un vin) or a Lubéron rosé, a Pétula from Vignobles Marrenon (€ 7.90 for un jour un vin).
